Chocolate Bundt Cake

Once, again me and my friend found myself in her kitchen scrolling through Pinterest and looking for baking ideas. We didn't exactly have all the ingredients we wanted, but I remembered the chocolate cake my mom made for Easter; the recipe... on the back of your Hershey's cocoa box. Never thought to look there huh? 
Boiling water and real chocolate come together in a moist, dark cake with a thick ganache-like frosting. I think this recipe assembles best as a bundt cake, because it is so rich and gooey it'd be harder to handle in layers. 



INGREDIENTS

Cake
-2 cup sugar
-1 3/4 cup all-purpose flour
-3/4 cup 100% cacao unsweetened cocoa powder
-1 1/2 tsp baking powder
-1 1/2 tsp baking soda
-1 tsp salt
-2 eggs
-1 cup milk
-1/2 cup vegetable oil + spray
-2 tsp vanilla extract
-1 cup boiling water
Frosting
1/2 cup (1 stick) butter
-2/3 cup 100% cacao unsweetened cocoa powder
-3 cups powdered sugar
-1/3 cup milk
-1 tsp vanilla extract
Decor (optional)
-Chocolate chips or other candies


SPECIAL EQUIPMENT
-Stand mixer + whisk attachment
-Bundt cake pan

DIRECTIONS
Cake (makes one cake)
1. Boil the water. Meanwhile...
2. Combine sugar, flour, cocoa powder, baking powder, baking soda, and salt in a large bowl.
3. Add eggs, milk, oil, and vanilla, beat on medium speed for 2 minutes.
4. Stir in boiling water (batter will be thin).


5. Pour into a cake pan greased with oil spray.


6. Bake for 30-35 minutes at 350℉. Cake is done when a toothpick comes out clean.
7. Cool for 10 minutes in the pan, then flip onto a wire rack until cooled completely.
Frosting (2 cups)
1. Melt butter and stir in cocoa.
2. Alternately add powdered sugar and milk, beating to spreading consistency.
3. Stir in vanilla and add small amount of milk, if needed.



Assembly
1. Transfer cake to serving platter.
2. Evenly spread frosting all around.
3. Top with chocolate chips/candy (optional).
